Pistachio Cherry Creme Brulee Recipe

Preparation

    Prepare the Oven

    Preheat your oven to 325°F (163°C).

    Make the Custard Base

    In a saucepan, heat the heavy cream and granulated sugar over medium heat, stirring until the sugar is dissolved and the mixture is hot but not boiling.

    Mix Egg Yolks

    In a bowl, whisk together the egg yolks, vanilla extract, and pistachio syrup until well combined.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to prevent the eggs from scrambling.

    Add Cherry Jam

    Stir in the sweet cherry jam until evenly distributed.

    Prepare Ramekins

    Place several ramekins in a baking dish. Pour the custard mixture into the ramekins, filling them about 3/4 full.

    Bake in Water Bath

    Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool. Once cooled, cover and refrigerate for at least 2 hours or overnight.

    Caramelize the Sugar

    Before serving, sprinkle a thin layer of raw sugar on top of each custard. Using a kitchen torch, carefully caramelize the sugar until it melts and turns golden brown. Allow it to cool and harden.
