Prepare the Chicken
Season the chicken breasts generously with Cajun seasoning, salt, and black pepper on both sides.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side, or until the chicken is cooked through and has a nice blackened crust. Remove chicken from skillet and set aside.

Make the Cajun Cream Sauce
In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.

Finish the Sauce
Stir in the heavy cream and chopped green onions. Allow the sauce to simmer for another 3-5 minutes, or until it thickens slightly. Adjust seasoning if necessary.

Combine and Serve
Return the blackened chicken to the skillet, spoon the Cajun cream sauce over the top, and cook for an additional 2 minutes to heat through. Serve hot, garnished with additional green onions if desired.
