Boil water

Bring 2 cups of fresh cold water to a rolling boil in a kettle or saucepan.

Cool to proper temperature

Remove from heat and let the water cool for about 1–2 minutes so it reaches roughly 175–185°F (80–85°C). If you don't have a thermometer, this is when the large bubbles subside and small bubbles still rise but it is not vigorously boiling.

Steep tea

Place 1 tablespoon loose green tea leaves (or 1 tea bag) into a teapot or cup. Pour the hot water over the leaves. Steep for 1½–3 minutes depending on desired strength: 1½–2 minutes for delicate, grassy flavor; up to 3 minutes for fuller taste. Avoid steeping longer to prevent bitterness.

Remove leaves

Remove the tea bag or strain out the leaves immediately after steeping to stop extraction.

Sweeten and finish

If desired, stir in up to 1 teaspoon honey or sugar, adjusting to taste. Add a lemon slice or a few drops of lemon juice to taste. Do not add milk unless you prefer an untraditional variation.

For serving

Pour the brewed green tea into cups. If the tea is stronger than desired, dilute with up to 1/2 cup extra hot water. Serve immediately while warm.
