Preparation

    Prepare the Ingredients

    Slice the chicken, beef, or shrimp into bite-sized pieces. Julienne the onion, carrot, and bell pepper. Shred the cabbage.

    Cook the Noodles

    Cook the egg noodles or rice noodles according to package instructions. Drain and set aside.

    Stir-fry the Protein

    In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced protein (chicken, beef, or shrimp) and stir-fry for about 5-7 minutes until cooked through. Remove from the wok and set aside.

    Cook the Vegetables

    In the same wok, add a little more oil if needed, then add the minced ginger, onion, carrot, and bell pepper. Stir-fry for 3-4 minutes until they start to soften. Add the shredded cabbage and stir-fry for an additional 2 minutes.

    Combine Everything

    Return the cooked protein to the wok with the vegetables. Add the cooked noodles, soy sauce, sesame oil, sugar, and black pepper. Toss everything together and stir-fry for another 2-3 minutes until everything is well combined and heated through.

    Add the Eggs

    Make a well in the center of the stir-fry and crack the eggs into the well. Stir the eggs quickly to scramble them, then mix them into the noodles and vegetables until fully incorporated.

Serving

    Plate and Serve

    Remove the wok from heat and serve the wok-fried noodles in bowls. Garnish with additional soy sauce or sesame oil if desired.
