Method

Ravioli Preparation

    Make the Dough

    In a mixing bowl, combine all-purpose flour and salt. Make a well in the center, add eggs, and olive oil. Mix until dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Cheese Filling

    In a bowl, mix ricotta, mozzarella, and parmesan cheese. Season with salt and set aside.

Seafood Filling Preparation

    Cook the Seafood

    In a pan, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes. Add shrimp, scallops, and mahi mahi. Season with salt and pepper, and cook until shrimp are pink and seafood is cooked through. Remove from heat and mix in parsley.

Ravioli Assembly

    Roll Out the Dough

    After resting, roll out the dough into thin sheets using a pasta machine or rolling pin.

    Fill the Ravioli

    Place small mounds of cheese mixture and seafood filling on one sheet of dough, then cover with another sheet. Press to seal and cut into individual ravioli.

Red Pepper Cream Sauce Preparation

    Make the Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add roasted red pepper and cook for 2-3 minutes.

    Add Cream

    Pour in heavy cream and bring to a simmer. Season with salt and pepper, and stir in grated parmesan until melted.

Cooking the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add ravioli and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon.

Serving

    Combine and Serve

    In a serving dish, combine the cooked ravioli with the red pepper cream sauce. Toss gently to coat and serve immediately.
