Marinating the Chicken

Prepare the Chicken
Cut the chicken breast into 1-inch cubes for even cooking.

Mix Marinade
In a bowl, whisk together soy sauce, lime juice, minced garlic, minced ginger, red pepper flakes, and honey.

Marinate Chicken
Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Making the Peanut Sauce

Combine Sauce Ingredients
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, sriracha, and water.

Cook Sauce
Stir the mixture until smooth and the sauce begins to simmer. Lower the heat and let it cook for an additional 5 minutes, stirring occasionally.

Cool the Sauce
Remove from heat and allow to cool slightly before serving.
Grilling the Skewers

Preheat Grill
Preheat your grill to medium-high heat.

Skewer Chicken
Thread the marinated chicken onto skewers, leaving a little space between each piece.

Plate and Garnish
Remove the skewers from the grill and place them on a serving platter. Drizzle with peanut sauce and sprinkle with chopped peanuts and sliced green onions.
