Steak Preparation

Season the Steak
Generously season the sirloin steaks with salt and crushed black peppercorns on both sides.

Sear the Steak
In a large skillet over medium-high heat, add olive oil and heat until shimmering. Add the seasoned steaks and sear for 4-5 minutes on each side for medium-rare. Once done, remove from the skillet and let rest.

Add Brandy
Carefully add the brandy to deglaze the pan, scraping up any browned bits from the bottom. Allow to simmer for 1-2 minutes.

Add Broth and Cream
Pour in the beef broth and bring to a boil. Reduce heat and stir in the heavy cream and thyme. Simmer for an additional 3-5 minutes until thickened.
Garlic Mashed Potatoes

Boil Potatoes
Peel and cut the russet potatoes into quarters. In a pot, bring salted water to a boil and add the potatoes and garlic cloves. Cook for 15-20 minutes until tender.

Trim the ends of the green beans and slice the carrots into thin rounds.
