Shrimp Patty

Prepare the Shrimp
In a food processor, pulse the shrimp until finely chopped but not a paste. Transfer to a mixing bowl.

Mix Ingredients
Add breadcrumbs, green onion, garlic, egg, salt, black pepper, and cayenne pepper to the chopped shrimp. Mix until well combined.

Form Patties
Divide the mixture into 4 equal portions and shape them into patties.

Pineapple Slaw

Combine Ingredients
In a large bowl, combine shredded cabbage, grated carrot, diced pineapple, cilantro, lime juice, and salt.

Mix and Chill
Toss the ingredients together until well mixed. Chill in the refrigerator for at least 30 minutes.
Wasabi Mayo

Mix Ingredients
In a small bowl, whisk together mayonnaise, wasabi paste, and lime juice until smooth.
Fried Jalapenos

Prepare the Batter
In a mixing bowl, combine flour, cornstarch, salt, and water. Stir until a smooth batter forms.

Heat Oil
In a deep skillet, heat oil over medium-high heat until hot.

Fry Jalapenos
Dip sliced jalapenos into the batter, then carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Assembly

Assemble the Burger
Toast brioche buns if desired. Spread a generous amount of wasabi mayo on the bottom bun, place the shrimp patty on top, add a scoop of pineapple slaw, and top with fried jalapenos. Finish with the top bun.
