Pastrami Preparation

    Prepare the Pastrami

    In a bowl, combine brown sugar, black pepper, paprika, garlic powder, and onion powder. Rub this mixture all over the smoked pastrami. Allow it to marinate for at least 30 minutes.

    Cook the Pastrami

    Preheat your smoker or grill to 250°F (120°C). Smoke the pastrami for about 2-3 hours until it reaches an internal temperature of 190°F (88°C). Let it rest for 15 minutes before slicing it into burnt ends.

Russian Dressing Preparation

    Make the Russian Dressing

    In a medium bowl, mix together mayonnaise, ketchup, horseradish, dill pickle relish, and paprika until well combined. Adjust seasoning to taste and set aside.

Assembly

    Toast the Hoagie Rolls

    Spread butter on the outside of each hoagie roll. Heat a skillet over medium heat and toast the rolls until golden brown on both sides.

    Assemble the Hoagies

    Layer the sliced pastrami burnt ends, followed by sauerkraut and Swiss cheese inside each toasted hoagie roll. Drizzle generously with the house-made Russian dressing.
