Marinade Preparation

    Marinate the Lamb Chops

    In a large mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add the lamb chops, ensuring they are fully coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

    Sauté the Topping

    In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the sliced red onion and sauté for about 5 minutes until translucent. Add the halved cherry tomatoes, balsamic vinegar, salt, and black pepper. Cook for an additional 5-7 minutes until the tomatoes soften. Set aside.

Quinoa Vegetable Blend

    Cook the Quinoa

    In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, diced carrot, bell pepper, and zucchini. Season with 0.5 tsp salt and 0.5 tsp black pepper. Cover, reduce heat to low, and simmer for about 15 minutes until the quinoa is fluffy and the vegetables are tender. Stir in 1 tablespoon of olive oil and fluff with a fork.

    Sauté the Vegetables

    In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and green beans. Season with 0.5 tsp salt and 0.5 tsp black pepper. Sauté for about 5-7 minutes until the vegetables are tender-crisp.

    Pan Seer the Lamb Chops

    Remove the lamb chops from the marinade and shake off excess. In a large skillet, heat a bit of olive oil over medium-high heat. Add the lamb chops and sear for about 4-5 minutes on each side for medium-rare, or longer to your desired doneness.

Plating

    Serve the Dish

    On each plate, place a generous serving of the quinoa vegetable blend, top with sautéed roasted tomatoes and red onions, and place the seared lamb chops on top. Garnish with fresh herbs if desired.
