Pasta Preparation

    Cook the Cavatappi Pasta

    In a large pot, bring salted water to a boil. Add 8 cups of cavatappi pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.

Cheese Sauce Preparation

    Make the Cheese Sauce

    In a large saucepan over medium heat, melt 4 tablespoons of butter. Once melted, whisk in 1 cup of all-purpose flour, stirring continuously for about 2 minutes until the mixture is golden brown.

    Add Milk

    Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to cook, stirring, until the mixture thickens.

    Add Cheese and Seasonings

    Remove the saucepan from heat and stir in 2 cups of smoked cheddar cheese and 1 cup of Monterey Jack cheese until melted and smooth. Add 1 teaspoon each of garlic powder and onion powder, and season with salt and black pepper to taste.

Combine Ingredients

    Mix Pasta with Cheese Sauce

    Combine the drained cavatappi pasta with the cheese sauce in a large mixing bowl. Stir until the pasta is fully coated with the sauce.

    Add Toppings

    Add 0.5 cup of chopped green onions and 2 cups of grilled chicken (or pastrami burnt ends) to the pasta and mix well.

Serve

    Plate the Dish

    Serve the mac and cheese hot, topped with 1 cup of Viennese onions for added flavor and crunch.
