Prepare the Dumplings

Make the Filling
In a mixing bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Fill the Wrappers
Take a gyoza wrapper and place a teaspoon of the pork filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a half-moon shape, and press to seal. Repeat this step until all filling is used.
Prepare the Dipping Sauce

Mix the Sauce
In a small bowl, combine the chopped cilantro, grated ginger, soy sauce, rice vinegar, and sugar. Stir well until the sugar is dissolved and the mixture is well combined. Set aside.
Fry the Dumplings

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Dumplings
Carefully add the gyoza to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Dumplings
Add 1/4 cup of water to the pan and immediately cover with a lid. Let the dumplings steam for about 4-5 minutes, until the water has evaporated.

Crisp the Dumplings
Remove the lid and continue to fry for another 1-2 minutes until the bottoms are crispy again. Remove from the pan and place on a plate lined with paper towels.
