Wash the Spinach
Thoroughly rinse the fresh spinach leaves under cold running water to remove any dirt or grit. Drain well and pat dry with a clean kitchen towel or paper towels.

Prepare the Seasoning
In a small bowl, combine the salt and black pepper. Set aside for later use.

Heat the Oil
In a large skillet or frying pan, heat the olive oil over medium-high heat until it shimmers, but do not let it smoke.

Flash Fry the Spinach
Add the washed spinach leaves to the hot oil in batches, if necessary, to avoid overcrowding. Fry for about 30 seconds to 1 minute, until the spinach leaves are wilted and bright green but still crispy. Use a slotted spoon to remove the spinach from the oil and transfer it to a plate lined with paper towels to drain excess oil.

Season the Spinach
While the spinach is still warm, sprinkle the prepared salt and pepper mixture over it, followed by the fresh lemon juice. Toss gently to combine.
Serving

Plate the Dish
Transfer the flash-fried spinach to a serving platter. Top with shredded Parmesan cheese before serving.
