Garlic Chili Sauce
Method
Preparing the Calamari

Soak the Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes. This helps to tenderize the squid.

Mix Dry Ingredients
In a separate bowl, mix together the all-purpose flour, cornstarch, cajun seasoning, salt, and black pepper. This will be the coating for the calamari.
Frying the Calamari

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat the Calamari
Remove the calamari from the buttermilk and let any excess drip off. Dredge the calamari rings in the flour mixture until well coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to absorb excess oil.
Making the Garlic Chili Sauce

Combine Ingredients
In a small saucepan, combine minced garlic, red chili flakes, soy sauce, honey, and lime juice.

Simmer the Sauce
Heat the mixture over medium heat, stirring occasionally, until it simmers. Allow it to cook for about 5 minutes until slightly thickened.
Serving

Plate and Serve
Transfer the fried calamari to a serving platter and drizzle with the garlic chili sauce. Serve hot with extra sauce on the side for dipping.
