Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine 2 cups of white rice and 4 cups of water. Add 1 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Proteins

    Cook the Chicken/Beef/Shrimp

    Cut the chicken or beef into bite-sized pieces. Heat 2 tbs of olive oil in a large skillet or wok over medium-high heat. Add the chicken or beef pieces and season with 1 tsp of salt and 1 tsp of black pepper. Cook until fully cooked (about 5-7 minutes for chicken or 3-5 minutes for beef). If using shrimp, cook until they turn pink (about 3-4 minutes). Remove from skillet and set aside.

Stir-fry the Vegetables

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if needed. Add broccoli, snow peas, carrots, red bell peppers, mushrooms, and bamboo shoots. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.

Combine and Serve

    Mix Everything Together

    Return the cooked protein to the skillet with the vegetables. Pour in the sweet teriyaki or spicy Szechuan sauce, stirring to coat everything evenly. Cook for an additional 2-3 minutes until heated through.

    Serve

    Fluff the cooked rice with a fork and divide it among serving bowls. Top with the stir-fried chicken, beef, or shrimp and vegetables. Drizzle with additional sauce if desired and serve hot.
