Caramelized Onions

Prepare the Onions
Peel and slice the onions into thin rings.

Cook the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes.
Russian Dressing

Mix the Dressing
In a bowl, combine the mayonnaise, ketchup, horseradish, Worcestershire sauce, paprika, salt, and black pepper. Mix until well combined. Adjust seasoning to taste.
Patty Melt Assembly

Form the Patties
Divide the ground beef into 4 equal portions and shape them into patties, about the size of the bread slices.

Cook the Patties
In a skillet over medium-high heat, cook the beef patties for about 4-5 minutes on each side, or until they reach your desired doneness.

Assemble the Patty Melt
On the toasted side of two slices of bread, spread a generous amount of Russian dressing. Place a cooked patty on each slice, top with caramelized onions, and layer with Swiss cheese. Top with the remaining slices of bread, toasted side facing in.

Serve
Remove from skillet, slice in half, and serve hot with additional Russian dressing on the side if desired.
