Method

Cooking the Pasta

  1. 1

    Prepare the Cavatappi Pasta

In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

Making the Burnt Ends

  1. 2

    Prepare Pastrami Burnt Ends

In a skillet over medium heat, add the diced pastrami and BBQ sauce. Cook until the pastrami is heated through and slightly crispy on the edges, about 5-7 minutes. Remove from heat and set aside.

Making the Cheese Sauce

  1. 3

    Prepare the Cheese Sauce

In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until slightly golden. Gradually whisk in the milk, stirring continuously until the mixture thickens, about 5 minutes.

  2. 4

    Add Cheese and Seasoning

Remove the saucepan from heat and stir in the shredded house-smoked cheddar cheese until melted and smooth. Season with salt, black pepper, and garlic powder.

Combining the Ingredients

  1. 5

Combine Pasta, Cheese Sauce, and Burnt Ends

In a large mixing bowl, combine the cooked cavatappi pasta, cheese sauce, and pastrami burnt ends. Stir well to ensure everything is evenly coated.

Serving

  1. 6

    Serve the Mac & Cheese

Spoon the fire & ice mac & cheese into bowls and top with crispy Viennese onions. Enjoy your delicious dish!
