Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Crust Ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

  3. 3

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes, until set and slightly golden. Remove from the oven and let cool.

Cheesecake Filling Preparation

  1. 5

    Beat Cream Cheese

In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

  2. 6

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, beating until well combined.

  3. 7

    Incorporate Vanilla and Eggs

Add the vanilla extract and eggs, one at a time, mixing well after each addition until the batter is smooth.

  4. 8

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust and spread it evenly.

  5. 9

    Bake the Cheesecake

Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

  6. 10

    Chill the Cheesecake

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Brulee Topping Preparation

  1. 11

    Prepare the Topping

In a small saucepan, heat the heavy cream and vanilla extract over medium heat until just simmering. Remove from heat and let cool for 10 minutes.

  2. 12

    Add Sugar

Sprinkle the granulated sugar evenly over the top of the chilled cheesecake. Use a kitchen torch to caramelize the sugar until it turns golden brown and bubbly.

  3. 13

    Cool Again

Let the brulee topping cool completely before slicing and serving the cheesecake.
