Method
Fish Tacos

Prepare the Mahi Mahi
Rub the Mahi Mahi fillets with jerk seasoning evenly on both sides.

Warm the tortillas
In a separate pan or directly over the flame, warm the flour tortillas for a few seconds on each side until pliable.
Pineapple Slaw

Mix the slaw ingredients
In a large bowl, combine shredded cabbage, diced pineapple, shredded carrot, and chopped cilantro.

Dress the slaw
Drizzle lime juice and sprinkle salt over the slaw mixture. Toss to combine well.
Sweet & Spicy Jerk Sauce

Combine the sauce ingredients
In a small bowl, mix mayo, jerk seasoning, honey, and lime juice until smooth and well combined.
Jamaican Rice & Peas

Rinse the rice
Rinse the long grain rice under cold water until the water runs clear.

Cook the rice
In a medium pot, combine rinsed rice, kidney beans, coconut milk, water, chopped scallions, dried thyme, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender and liquid is absorbed.

Fluff and serve
Once cooked, fluff the rice with a fork and let it sit covered for 5 minutes before serving.
