    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Mix the flour into the eggs until a rough dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Cheese Filling

    Mix the Filling

    In a mixing bowl, combine the ricotta, mozzarella, and parmesan cheese. Add black pepper and nutmeg, mixing until well combined.

Seafood Preparation

    Cook the Seafood

    In a skillet over medium heat, add 1 tablespoon of olive oil. Add the shrimp and scallops, cooking for about 3-4 minutes until they turn opaque. Add the diced mahi mahi and cook for another 3-4 minutes until cooked through. Remove from heat and set aside.

Red Pepper Cream Sauce

    Make the Sauce

    In the same skillet, add 1 tablespoon of olive oil and minced garlic, sautéing for 1-2 minutes. Add the roasted red pepper and heavy cream, stirring well. Season with salt and black pepper, and simmer for about 5 minutes until slightly thickened.

Assemble and Cook Ravioli

    Roll out the Dough

    After the dough has rested, roll it out into thin sheets using a pasta machine or rolling pin.

    Form the Ravioli

    Place small spoonfuls of the cheese filling on one sheet of dough, about 2 inches apart. Moisten the edges with water, then fold the dough over to create pockets. Press to seal.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float to the top. Remove with a slotted spoon and set aside.

Combine and Serve

    In a large serving bowl, combine the cooked ravioli with the seafood mixture and red pepper cream sauce, tossing gently to coat.
