Noodle & Vegetables

    Cook noodles

    Bring a large pot of salted water to a boil. Add soba noodles and cook according to package directions (typically 4–6 minutes) until just tender. Stir gently to prevent sticking.

    Reserve 1/2 cup of the noodle cooking water, then drain the noodles in a colander and rinse thoroughly under cold running water to stop cooking and remove excess starch. Shake off excess water and set aside in a large mixing bowl.

    Prepare vegetables while noodles cook. Peel (if desired) and julienne or shred the carrots to yield about 1 1/2 cups. Trim root ends from scallions and slice thinly on the bias (both white and green parts). Thinly slice the cucumber lengthwise, scoop seeds if large, and cut into half-moons or matchsticks. Thinly slice napa cabbage into 1/4-inch ribbons to yield about 2 cups. If edamame are frozen, briefly blanch in boiling water for 1–2 minutes then drain and cool; if already cooked, warm or use cold.

    Combine noodles and prepared vegetables (carrots, scallions reserving some for garnish, cucumber, napa cabbage, edamame) in the large mixing bowl. Toss gently to combine and make space for dressing.

Dressing

    Make dressing: In a small bowl or jar add sesame oil, soy sauce, rice vinegar, grated ginger, minced garlic, honey or maple syrup, lime juice (from the fresh lime), toasted sesame seeds, and chili flakes if using. Whisk or shake vigorously until emulsified. Taste and adjust: add up to 1–2 teaspoons more honey/maple for sweetness, more soy for saltiness, or up to 1 tablespoon more lime juice for acidity.

    If dressing is too thick or strong, whisk in reserved noodle cooking water 1 tablespoon at a time until desired consistency is reached (you likely will use 1–2 tablespoons).

    Pour about three-quarters of the dressing over the noodle and vegetable mixture and toss thoroughly until everything is evenly coated. Reserve remaining dressing for serving if anyone wants more.

Toppings & Finish

    Add fresh mint leaves (torn or thinly stacked and sliced) to the tossed noodles and fold gently to distribute.

    Season the bowl with salt and black pepper to taste. If desired, drizzle the optional 1/2 teaspoon sesame oil for a glossy finish.

    Transfer to serving bowls. Sprinkle chopped roasted peanuts and additional sliced scallions and a few sesame seeds over each bowl. Serve with lime wedges on the side and the reserved dressing.

    If preparing ahead: keep dressing separate and toss with noodles just before serving. Noodles will keep in the fridge up to 2 days; add peanuts and mint fresh at service to preserve texture and aroma.
