    Prepare the Breakfast Potatoes

    Wash and dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat. Add the potatoes, paprika, garlic powder, salt, and pepper. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes.

    Cook the Bacon

    In another skillet, cook the bacon over medium heat until crispy. Remove from the pan and let drain on paper towels.

    Fry the Eggs

    In the bacon grease (or a bit of butter if preferred), crack the eggs into the skillet. Season with salt and pepper. Fry until the whites are set but the yolks are still runny, about 3-4 minutes.

    Assemble the Sandwich

    Place a slice of cheddar cheese on top of each fried egg in the skillet to melt. Meanwhile, slice the brioche rolls in half and toast them lightly if desired. Layer the bacon and fried eggs with melted cheese on the bottom half of each roll, then top with the other half.

    Serve

    Plate the egg sandwiches alongside the breakfast potatoes and serve while hot.
