Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Allow to sit for about 5-10 minutes until foamy.

    Mix Dry Ingredients

    In a large mixing bowl, combine all-purpose flour and salt.

    Combine Ingredients

    Add the activated yeast mixture and olive oil into the dry ingredients. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the kneaded dough in a lightly oiled bowl, cover with a cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Assembling the Pizza

    Prepare the Oven

    Preheat your wood-fired oven to a temperature of 800°F (427°C) for at least 30 minutes to ensure it’s hot enough.

    Shape the Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Divide it into two equal pieces for small pizzas. Roll or stretch each piece into a 10-inch circle.

    Add Sauce

    Spread 1/2 cup of tomato sauce evenly over the dough, leaving a small border around the edge.

    Add Cheese and Toppings

    Sprinkle 1/2 cup of shredded mozzarella cheese over the sauce. Add fresh basil leaves and any additional toppings of your choice.

    Drizzle Olive Oil

    Drizzle a little olive oil over the top of the assembled pizza for added flavor.

    Bake the Pizza

    Carefully transfer the pizza to the wood-fired oven using a pizza peel. Bake for about 90 seconds to 2 minutes, rotating halfway through, until the crust is golden and the cheese is melted and bubbly.
