Sauce Preparation

    Cook Pancetta

    In a large saucepan over medium heat, add olive oil. Once heated, add the pancetta and cook until crispy, about 5-7 minutes.

    Sauté Garlic and Spices

    Add minced garlic and crushed red pepper flakes to the pancetta. Sauté for an additional 1-2 minutes until garlic is fragrant.

    Add Tomatoes

    Pour in the canned plum tomatoes, crushing them with a spoon. Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally.

    Stir in Cream and Herbs

    Lower the heat and stir in the heavy cream, chopped fresh basil, and grated romano cheese. Season with salt and black pepper to taste. Simmer for another 5 minutes until the sauce is heated through.

Pasta Cooking

    Cook Macaroni

    In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente, usually about 8-10 minutes.

    Combine with Sauce

    Drain the macaroni and add it to the vodka sauce. Toss until the pasta is evenly coated in the sauce. Serve immediately with additional grated romano cheese on top.
