Method

Pasta Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the imported spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Clam Sauce Preparation

  1. 2

    Sauté the Garlic and Clams

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the cleaned baby ocean clams and red pepper flakes. Cook for 2-3 minutes until the clams begin to open.

  2. 3

    Add Wine and Herbs

Pour in the white wine and bring to a simmer. Stir in the chopped fresh parsley and season with salt and black pepper to taste. Allow the mixture to simmer for another 5 minutes until the clams are fully opened and the alcohol has cooked off.

  3. 4

    Combine Sauce with Spaghetti

Add the cooked spaghetti to the skillet with the clam sauce. Toss gently to combine, adding reserved pasta water as needed to achieve desired sauce consistency. Stir in the remaining 2 tablespoons of butter for a rich finish.

Serving

  1. 5

    Plate and Serve

Serve the spaghetti and clam sauce immediately, garnished with additional parsley and a sprinkle of black pepper if desired.
