Method

Preparation

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, cook the imported spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

  2. 2

    Prepare the Asparagus

In the same pot, add a little olive oil and sauté the asparagus for about 3-4 minutes until they are tender but still crisp. Remove and set aside.

Cooking

  1. 3

    Sauté the Shrimp

In a large skillet, heat the remaining olive oil and half of the butter over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink.

  2. 4

    Add the Wine and Tomatoes

Pour in the white wine and add the marinated tomatoes. Allow the mixture to simmer for about 2-3 minutes to reduce slightly.

  3. 5

    Combine Ingredients

Add the cooked spaghetti and asparagus to the skillet. Toss everything together gently, adding reserved pasta water as needed to create a light sauce. Stir in the remaining butter, and season with salt and black pepper to taste.

Serving

  1. 6

    Plate and Garnish

Serve the shrimp scampi in bowls, garnished with chopped fresh parsley.
