    Prepare the Balsamic Reduction

    In a small saucepan over medium heat, combine balsamic vinegar and honey. Bring to a simmer and let it cook for about 15-20 minutes until it thickens slightly. Stir occasionally. Remove from heat and set aside.

Garlic Mashed Potatoes

    Cook the Potatoes

    Peel and chop the russet potatoes into large chunks. Place them in a large pot and cover with water. Add 1 tsp of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, salt, and black pepper. Mash until smooth and creamy. Keep warm.

Sautéed Spinach

    Sauté the Spinach

    In a large skillet, heat 1 tbs of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach, salt, and black pepper. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat.

    Pan-Seared Salmon

    Season the salmon fillets with salt and black pepper. In a large skillet, heat 2 tbs of olive oil over medium-high heat. Once hot, add the salmon, skin side down. Cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily.

Plating

    Plate the Dish

    On each plate, create a bed of garlic mashed potatoes, top with sautéed spinach, and place the pan-seared salmon on top. Drizzle the sweet balsamic reduction over the salmon. Serve immediately.
