Prepare Ingredients

  1. 1

    Slice the Ribeye

Thinly slice the ribeye steak against the grain into strips about 1/4 inch thick. This will help ensure tenderness.

  2. 2

    Chop Vegetables

Slice the onion, mushrooms, and green bell pepper into thin strips, roughly the same size as the ribeye.

Cook the Steak and Vegetables

  1. 3

    Heat the Pan

In a large skillet or griddle, heat 2 tablespoons of olive oil over medium-high heat.

  2. 4

    Cook the Vegetables

Add the sliced onions, mushrooms, and green bell pepper to the skillet. Season with salt and black pepper. Sauté for about 5-7 minutes or until they are tender and starting to caramelize.

  3. 5

    Add Ribeye

Push the vegetables to one side of the skillet. Add the sliced ribeye to the other side, seasoning with a little more salt and black pepper. Cook for about 3-4 minutes, stirring occasionally, until the steak is browned and cooked to your liking.

Combine and Melt Cheese

  1. 6

    Mix Ingredients

Once the steak is cooked, mix it with the sautéed vegetables in the skillet.

  2. 7

    Add Cheese

Lay the provolone cheese slices over the meat and vegetables. Cover the skillet with a lid and let it cook for 2-3 minutes or until the cheese is melted.

Assemble Sandwiches

  1. 8

    Prepare Grinder Rolls

Slice each grinder roll in half lengthwise without cutting all the way through.

  2. 9

    Fill the Rolls

Spoon the ribeye and vegetable mixture into the bottom half of each grinder roll.

  3. 10

    Serve

Close the sandwich and serve hot. Enjoy your Philly Cheese Steak Sandwich!
