Prepare the Pizza Dough

Activate Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tsp) over the water and let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Make a well in the center and add the yeast mixture and olive oil (2 tbs). Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour.
Prepare the Toppings

Marinate Tomatoes
Chop the plum tomatoes (2 cups) and marinate them in a bowl with salt and pepper to taste for about 15 minutes.

Prepare Chicken
If not already cooked, grill or bake the chicken breast until fully cooked, then shred it into pieces.
Assemble and Bake Pizza

Preheat Oven
Preheat your oven to 475°F (245°C).

Roll Out Dough
Once the dough has risen, punch it down and roll it out on a floured surface into a large pizza shape, about 12-14 inches in diameter.

Add Toppings
Transfer the rolled dough to a pizza stone or baking sheet. Spread the basil pesto (0.5 cups) evenly over the dough. Layer the marinated tomatoes, shredded chicken (1 cup), and tear the fresh Mozzarella cheese (1 cup) into pieces, evenly distributing them over the pizza.

Bake Pizza
Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbling.

Finish with Balsamic Reduction
Once baked, drizzle the balsamic reduction (0.25 cups) over the pizza before slicing and serving.
