Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through for even cooking.

In a mixing bowl, combine the sour cream and chopped fresh chives. Stir well until fully combined and set aside.

Once the butter is melted, whisk in the all-purpose flour to create a roux. Cook for about 1-2 minutes, stirring constantly until it turns a light golden color.

Slowly pour in the milk while whisking continuously to avoid lumps. Keep cooking and stirring until the mixture thickens, about 3-5 minutes.
