Pizza Base

Mashed Potatoes

Method

Pizza Base Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy.

  2. 2

    Make Dough

In a large bowl, mix flour and salt together. Add the yeast mixture and olive oil. Knead the dough for about 5-7 minutes until smooth and elastic.

  3. 3

    Proof Dough

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Mashed Potato Preparation

  1. 4

    Boil Potatoes

Peel and cut the russet potatoes into quarters. Place them in a large pot, cover with water, and add salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

  2. 5

    Cook Garlic

In the last 5 minutes of cooking the potatoes, add garlic cloves to the pot to soften.

  3. 6

    Mash Potatoes

Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until creamy and smooth.

Toppings Preparation

  1. 7

    Caramelize Onions

In a skillet over medium heat, add sliced onions and a teaspoon of olive oil. Cook, stirring frequently, until onions are golden and caramelized, about 15-20 minutes.

  2. 8

    Prepare Scallions and Bacon

Chop scallions and crumble the cooked bacon.

Assembling and Baking the Pizza

  1. 9

    Preheat Oven

Preheat your oven to 475°F (245°C).

  2. 10

    Shape Pizza Base

Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Place it on a pizza stone or a baking sheet.

  3. 11

    Add Mashed Potatoes

Spread the garlic mashed potatoes evenly over the rolled-out pizza base.

  4. 12

    Add Toppings

Sprinkle caramelized onions, crumbled bacon, chopped scallions, and shredded cheddar cheese over the mashed potatoes.

  5. 13

    Bake Pizza

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.

  6. 14

    Cool and Serve

Remove the pizza from the oven, let it cool for a few minutes, then slice and serve warm.
