Method

Prepare the Mashed Potatoes

    Boil the Potatoes

    Peel and cut the Russet potatoes into quarters. Place them in a large pot, cover with water, and add a teaspoon of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Mince the Garlic

    While the potatoes are boiling, peel the garlic cloves and mince them finely.

    Mash the Potatoes

    Once the potatoes are cooked, drain them and return them to the pot. Add the minced garlic, butter, milk, salt, and black pepper. Mash until smooth and well combined.

Cook the Toppings

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon.

    Caramelize the Onion

    In the same skillet, add olive oil. Slice the onion thinly and add to the skillet, cooking over medium-low heat until golden brown and caramelized, about 15 minutes.

    Prepare the Scallions

    Chop the scallions, separating the green tops from the white bottoms.

Assemble the Pizza

    Preheat the Oven

    Preheat your oven to 475°F (245°C).

    Roll Out the Dough

    On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer it to a pizza stone or baking sheet.

    Spread the Mashed Potatoes

    Spread the prepared garlic mashed potatoes evenly over the pizza dough, leaving a small border around the edges.

    Add Toppings

    Sprinkle the crumbled bacon, caramelized onion, white parts of scallions, and then top with shredded Cheddar cheese.

    Bake the Pizza

    Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.

    Finish with Green Scallions
