Preparing the Salad Base

Prepare the vegetables
Wash the baby field greens thoroughly under cold water and spin dry or pat dry with a paper towel. Slice the bell pepper into thin strips and chop the tomato into bite-sized pieces.
Oven-Roasting Goat Cheese

Roast the goat cheese
Preheat your oven to 375°F (190°C). Place the goat cheese on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with fresh thyme if using. Bake for about 10-12 minutes or until the cheese is soft and slightly golden.
Making the Insalata Vinaigrette

Mix the vinaigrette
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Assembling the Salad

Combine and serve
In a large salad bowl, combine the washed baby field greens, bell pepper strips, and chopped tomato. Gently toss with the insalata vinaigrette. Top the salad with the oven-roasted goat cheese and serve immediately.
