Method

Prepare the Marinated Garbanzos

  1. 1

    Rinse and Drain Garbanzos

Open the can of garbanzo beans, rinse them under cold water, and drain well.

  2. 2

    Mix Ingredients

In a bowl, combine the rinsed garbanzos with olive oil, lemon juice, garlic powder, cumin, salt, and black pepper. Stir well to coat the beans.

  3. 3

    Marinate

Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.

Grill the Chicken

  1. 4

    Prepare Chicken

Pound the chicken breasts to an even thickness for uniform cooking.

  2. 5

    Season Chicken

Rub the chicken with olive oil, paprika, garlic powder, salt, and black pepper.

  3. 6

    Grill Chicken

Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Let it rest for a few minutes before slicing.

Prepare the Salad

  1. 7

    Chop Vegetables

Chop the cucumber, tomato, and red onion into bite-sized pieces.

  2. 8

    Combine Salad Base

In a large bowl, add the mixed greens, chopped cucumber, tomato, and onion.

  3. 9

    Add Marinated Garbanzos

Add the marinated garbanzos to the salad bowl and toss gently to combine.

Make the Dressing

  1. 10

    Combine Dressing Ingredients

In a small bowl, whisk together honey, white balsamic vinegar, olive oil, salt, and black pepper until well combined.

Assemble the Dish

    Slice Chicken

Slice the grilled chicken into strips.

  2. 12

    Dress the Salad
