Chicken

Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch.

  2. 2

    Breading Station

Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.

  3. 3

    Bread the Chicken

Dredge each chicken breast in the flour, shaking off excess. Then dip it into the egg, allowing excess to drip off, and finally coat it in the breadcrumb mixture. Ensure both sides are well-coated.

  4. 4

    Fry the Chicken

In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes per side, until golden brown. Transfer to a baking dish.

  5. 5

    Add Toppings

Top each piece of chicken with marinara sauce and shredded mozzarella cheese. Place in the preheated oven and bake for 15-20 minutes, until the cheese is melted and bubbly.

Pasta Cooking

  1. 6

    Cook the Linguini

While the chicken is baking, bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente, typically around 8-10 minutes.

  2. 7

    Drain the Pasta

Once cooked, drain the linguini in a colander and return it to the pot. Drizzle with a little olive oil and toss to prevent sticking.

Marinara Sauce Preparation

  1. 8

    Make the Marinara

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 9

    Add Tomatoes and Season

Pour in the canned crushed tomatoes, followed by oregano, salt, and black pepper. Stir to combine and let simmer for 10-15 minutes.

  3. 10

    Finish with Basil

Stir in chopped fresh basil just before serving. Adjust seasoning if necessary.

Serving

  1. 11

    Plate the Dish

To serve, place a generous portion of linguini on each plate, top with a piece of chicken parm, and spoon marinara sauce over the top. Garnish with fresh basil leaves.
