Crostata Preparation

    Make the Crostata Dough

    In a bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolks and vanilla extract, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Prepare the Fruit Filling

    In a bowl, toss the seasonal fruit with sugar, cornstarch, lemon juice, and cinnamon. Let sit for about 15 minutes to allow juices to release.

    Assemble the Crostata

    Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to fit a tart pan. Place the dough in the pan and fill with the prepared fruit mixture. Fold the edges of the dough over the filling, leaving the center exposed.

    Bake the Crostata

    Bake for 35-40 minutes or until the crust is golden and the fruit is bubbly. Allow to cool before serving.

    Prepare the Vanilla Gelato

    In a saucepan, heat the milk, cream, and sugar over medium heat. Scrape the seeds from the vanilla bean into the mixture and add the pod as well. Once heated, remove from heat. In a separate bowl, whisk the egg yolks, then temper them slowly with the warm milk mixture. Return to the saucepan and cook until thickened. Chill the mixture and churn in an ice cream maker according to manufacturer's instructions.

    Slice the crostata and serve warm with a scoop of vanilla gelato on the side.
