Pesto Cream Sauce

Method

Pesto Cream Sauce Preparation

  1. 1

    Blend the Sauce

In a medium saucepan over medium heat, combine the fresh basil pesto and heavy cream. Stir well until the mixture is smooth and heated through, about 3-4 minutes. Add the grated Parmesan cheese and minced garlic, and continue to stir until the cheese is melted and the sauce is well combined. Set aside.

Pasta and Shrimp Cooking

  1. 2

    Cook the Linguine

In a large pot of salted boiling water, cook the linguine according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving 1/2 cup of the pasta water.

  2. 3

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, season with salt and black pepper, and sauté for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

  3. 4

    Combine Ingredients

In the same skillet, add the chopped sundried tomatoes and cooked linguine. Pour in the pesto cream sauce and reserved pasta water, tossing everything together until well coated and heated through. Add the sautéed shrimp back to the skillet and mix until combined.

Garnishing and Serving

  1. 5

    Serve the Dish

Divide the pasta among serving plates. Top with crumbled fresh goat cheese and garnish with fresh basil leaves. Serve immediately while hot.
