Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large bowl, mix the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a rough dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Prepare Sausage
Remove the casing from the fennel sausage and crumble it into a skillet. Cook over medium heat until browned and fully cooked, about 5-7 minutes.

Prepare Cheese
While the sausage is cooking, slice the imported mozzarella cheese into thin rounds and set aside.
Pizza Assembly

Preheat Oven
Preheat your oven to the highest setting (usually around 475°F or 245°C) and place a pizza stone or baking sheet inside to heat up.

Shape Pizza
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Add Toppings
Transfer the rolled-out dough onto a piece of parchment paper. Layer with cooked fennel sausage, mozzarella cheese slices, and sprinkle grated pecorino on top.

Bake Pizza
Using a pizza peel, slide the pizza (with parchment) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, drizzle with olive oil, and top with fresh basil leaves. Slice and serve hot.
