Dough Preparation

Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Prepare the Oven Roasted Tomatoes
If using fresh tomatoes, roast them in the oven at 400°F (200°C) for about 25-30 minutes until they are soft and slightly caramelized. Let them cool and chop if needed.

Prepare the Mozzarella
Drain the mozzarella di bufala from its liquid and slice it into thick pieces.

Prepare the Basil
Wash and dry the fresh basil leaves, set them aside for topping the pizza.

Preheat the Oven
Preheat your oven to its highest setting (usually around 500°F or 260°C) and place a pizza stone or baking sheet inside to heat up.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal pieces. Shape each piece into a ball and let them rest for 10 minutes.

Roll out the Dough
Using a rolling pin or your hands, stretch each ball of dough into a 12-inch round pizza base.

Bake the Pizza
Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes until the crust is golden and the cheese is bubbly.

Garnish and Serve
Remove the pizza from the oven, top with fresh basil leaves, and drizzle with a bit more olive oil. Slice and serve hot.
