Base Preparation

    Combine Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm, but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

    Temper the Egg Mixture

    Slowly pour the warm milk and cream mixture into the egg yolk mixture while whisking continuously. This will temper the eggs and prevent them from scrambling.

    Cook the Mixture

    Return the tempered mixture to the saucepan. Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

    Add Vanilla

    Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 4 hours or overnight to chill completely.

Flavoring and Churning

    Prepare Flavorings

    While the base is chilling, prepare your flavorings. For chocolate gelato, stir in the chocolate syrup. For strawberry gelato, puree fresh strawberries and fold into the base. For pistachio gelato, add the chopped pistachios to the mixture.

    Churn the Gelato

    Once the base is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, typically about 20-25 minutes.

    Freeze the Gelato

    Transfer the churned gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
