Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Knead the Dough
Mix the ingredients until a dough forms. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Prepare Toppings
While the dough is rising, slice the spicy soppressata and tear the imported mozzarella into chunks.

Season Crushed Tomatoes
In a bowl, mix crushed tomatoes with salt and black pepper to taste.
Assembling and Baking

Preheat Oven
Preheat your oven to 475°F (245°C) or as high as it will go.

Shape Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll out into a pizza shape about 12-14 inches in diameter.

Add Sauce and Toppings
Transfer the pizza dough to a pizza stone or baking sheet. Spread the seasoned crushed tomatoes evenly over the surface. Add slices of soppressata and chunks of mozzarella cheese on top. Sprinkle with red pepper flakes.

Bake Pizza
Place the pizza in the preheated oven and bake for 12-15 minutes or until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven and garnish with fresh basil leaves. Allow to cool slightly before slicing and serving.
