Bacon Marmalade Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and drain on paper towels.

    Prepare Onion

    Finely chop the medium onion. In the same skillet, add the chopped onion and sauté until translucent.

    Combine Ingredients

    Add the crispy bacon, brown sugar, apple cider vinegar, and black pepper to the skillet. Stir well to combine.

    Simmer

    Reduce heat to low and let the mixture simmer for about 20 minutes, stirring occasionally. Once thickened, remove from heat and let cool.

    Prepare the Leek

    Clean the leek thoroughly, removing any grit. Slice it in half lengthwise and then crosswise into thin half-moons.

    Sauté Leek

    In a small skillet, heat the truffle oil over medium heat. Add the sliced leek and sauté until soft, about 3-4 minutes. Season with salt to taste.

    Assemble the Sandwich

    On a slice of artisan bread, spread a generous layer of bacon marmalade. Top with sautéed leek, a slice of Havarti cheese, a slice of oven roasted tomato, and a slice of aged cheddar cheese. Finish with another slice of artisan bread.

    Grill the Sandwich

    Preheat a grill pan or skillet over medium heat. Grill the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Slice the sandwich in half and serve warm, with extra bacon marmalade on the side if desired.
