Steak
Bring steak to temperature
Remove the rib-eye from the refrigerator 45–60 minutes before cooking so it reaches near room temperature. Pat dry thoroughly with paper towels.
Season
Generously season both sides and the fat edge of the steak with the kosher salt and freshly ground black pepper. Press seasonings into the meat.
Sear and baste
Heat a heavy skillet (cast-iron preferred) over high heat until smoking hot. Add the high-heat oil and swirl. Place the steak into the pan and do not move for 2–3 minutes to develop a deep brown crust. Flip and sear the second side 2–3 minutes. Reduce heat to medium-high, add the 2 tablespoons butter, crushed garlic cloves, and thyme sprigs. Tilt the pan and continuously spoon the melted butter over the steak (baste) for another 1–2 minutes, until an instant-read thermometer reads 125–128°F (52–53°C) for medium-rare (adjust to desired doneness). If the steak has a thick fat cap, hold it on its edge with tongs to render and brown the fat for 30–60 seconds.
Rest
Transfer the steak to a cutting board and loosely tent with foil. Rest for 8–10 minutes so juices redistribute. Reserve pan juices for finishing if desired.
Sautéed pickled cabbage
Prepare pan
While the steak rests (or while it comes to temperature), heat a medium skillet over medium heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil.
Sauté aromatics and apple
Add the minced shallot and sauté 1–2 minutes until translucent. If using apple, add the diced apple and cook another 1–2 minutes until it begins to soften.
Add pickled cabbage
Add the drained quick-pickled red cabbage to the skillet. Sauté 2–3 minutes, stirring, until warmed through and slightly caramelized at the edges. Sprinkle the brown sugar or honey and 1/4 teaspoon black pepper, toss to combine. Taste and, if needed, adjust sweetness or acidity by adding a dash of the pickling liquid or a pinch more sugar.
Finish
Fold in the chopped parsley off the heat. Keep warm until plating.
Cauliflower cream
Roast or sauté cauliflower (optional for deeper flavor)
Preheat oven to 220°C (430°F) if roasting. Toss cauliflower florets with 1 teaspoon neutral oil and a pinch of salt. Roast on a sheet pan 18–22 minutes until golden and tender. Alternatively, sauté in a skillet with 1 tablespoon butter until lightly browned and tender, about 8–10 minutes.
Simmer
In a small saucepan over medium heat, melt 1 tablespoon butter. Add the sliced shallot and whole garlic clove and sweat gently 2–3 minutes until fragrant but not browned. Add the roasted or sautéed cauliflower and pour in 120 ml stock. Simmer gently 6–8 minutes to let flavors meld and soften the shallot fully.
Blend to cream
Remove the garlic clove (or keep if you want a stronger garlic note) and transfer the mixture to a blender or use an immersion blender. Add 60 ml heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon white or black pepper. Blend until completely smooth and silky. If too thick, add up to 30–60 ml additional stock to reach a smooth pouring consistency.
Adjust and keep warm
Taste and adjust seasoning. Keep the cauliflower cream warm on very low heat, stirring occasionally; if it thickens too much, stir in a splash of stock or cream.
Finishing & plating
Slice steak
Slice the rested rib-eye against the grain into 1/2-inch thick slices. Arrange slices fanned slightly on each plate.
