Preparation

    Prepare the Corned Beef

    If using store-bought corned beef, slice it thinly against the grain. If making from scratch, cook corned beef until tender, then slice.

    Prepare the Sauerkraut

    Drain the sauerkraut to remove excess liquid. You may want to rinse it under cold water for a milder flavor.

    Toast the Bread

    Spread butter on one side of each slice of rye bread.

Assembling the Sandwich

    Layer the Ingredients

    On the non-buttered side of a slice of rye bread, layer 1/4 pound of corned beef followed by 1/4 cup of sauerkraut, a slice of Swiss cheese, and 2 tablespoons of Thousand Island dressing.

    Top and Butter

    Top with another slice of rye bread, buttered side facing out. Repeat for additional sandwiches.

Cooking

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Remove the sandwich from the skillet, slice in half, and serve hot with additional Thousand Island dressing on the side.
