Prepare the Strawberries
Wash the fresh strawberries thoroughly under cold running water. Remove the green tops and slice them into quarters.

Mix Ingredients
In a large mixing bowl, combine the sliced strawberries with lemon juice, granulated sugar, and brown sugar. Stir well to coat the strawberries evenly.

Cook the Mixture
Transfer the strawberry mixture to a large pot. Cook over medium heat, stirring frequently until the mixture comes to a boil.

Prepare Jars
While the jam is cooking, prepare your canning jars by washing them in hot soapy water. Rinse well and place them in a hot oven (around 200°F / 93°C) to sterilize.

Once the jam has thickened, carefully ladle it into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to ensure a proper seal.
