Method

Cumberland Sausage Preparation

    Mix Ingredients

    In a large bowl, combine the ground pork, pork fat, breadcrumbs, sage, thyme, salt, pepper, and nutmeg. Mix until well combined.

    Stuff Sausage Casings

    Rinse the sausage casings in cold water and soak them for about 30 minutes. Stuff the mixture into the casings tightly but not overly packed. Knot the ends.

    Cook Sausages

    Heat a grill or skillet over medium heat. Cook the sausages for about 15-20 minutes, turning occasionally until golden brown and cooked through.

Welsh Cheddar Cheese Preparation

    Prepare Cheese

    Cut the Welsh cheddar cheese into bite-sized cubes and set aside on the serving board.

House Made Pretzels Preparation

    Mix Dough

    In a large bowl, combine warm water, sugar, and yeast. Allow to sit for 5 minutes until bubbly. Add flour and salt, mixing until a dough forms.

    Knead Dough

    Knead the dough on a floured surface for about 5 minutes until smooth. Let it rest in a greased bowl for 1 hour, covered with a cloth.

    Shape Pretzels

    Preheat the oven to 450°F (230°C). Divide the dough into 8 pieces, roll each into a rope, and shape into a pretzel.

    Boil Pretzels

    In a large pot, bring water to a boil and add baking soda. Boil each pretzel for 30 seconds, then remove and place on a baking sheet.

    Bake Pretzels

    Sprinkle coarse sea salt on top and bake for 12-15 minutes until golden brown. Let cool before serving.

Beer Cheese Preparation

    Mix Beer Cheese

    In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, beer, garlic powder, onion powder, hot sauce, salt, and pepper. Mix until smooth and creamy.

    Serve

    Transfer the beer cheese to a serving bowl and set alongside the pretzels, sausage, cheese, and crackers on the snack board.
