Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with olive oil, salt, and black pepper until well coated.

Preheat your smoker to 225°F (107°C). Prepare your choice of wood chips (such as hickory or applewood) for smoking.

Place the chicken wings on the smoker grates, ensuring they are evenly spaced. Smoke the wings for about 1.5 hours, or until they reach an internal temperature of 165°F (74°C).
Making the Sauces

Juntao Sauce
In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and red chili flakes. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and set aside.

In a small bowl, mix together the fresh lemon juice, lemon zest, honey, and Dijon mustard until well blended.
