Pretzel Dough Preparation

Activate the Yeast
In a large bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for about 5-10 minutes until frothy.

Mix the Dough
Add salt and flour to the yeast mixture. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm area for about 1 hour or until doubled in size.
Shaping and Baking Pretzels

Preheat the Oven
Preheat your oven to 450°F (232°C).

Shape the Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Add baking soda carefully, and stir until dissolved.

Boil the Pretzels
Drop pretzels into the boiling water, 1-2 at a time, and boil for about 30 seconds. Remove with a slotted spoon and place on a baking sheet.

Sprinkle with Coarse Salt
Sprinkle the boiled pretzels with coarse sea salt before baking.

Bake the Pretzels
Bake in the preheated oven for 12-15 minutes until golden brown.
Beer Cheese Sauce Preparation

Combine Ingredients
In a medium saucepan over medium heat, combine cream cheese and beer. Stir until smooth.

Add Cheese and Spices
Gradually add shredded cheddar cheese, garlic powder, onion powder, paprika, black pepper, and salt. Stir until the cheese is melted and the sauce is creamy.

Remove from heat and serve warm with the pretzels.
