Pulled Pork Preparation

    Cook the Pork

    In a slow cooker, place the pork shoulder, chopped onion, minced garlic, salt, and black pepper. Cook on low for 8 hours or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker, shred it with two forks, and mix it with BBQ sauce. Set aside.

Pickling the Vegetables

    Prepare the Pickling Solution

    In a saucepan, combine rice vinegar, sugar, and salt. Heat over medium until the sugar dissolves.

    Pickle the Carrots and Daikon

    Julienne the carrots and daikon radish. Place them in a jar and pour the pickling solution over them. Let them pickle for at least 1 hour in the refrigerator.

Prepare the Vegetables and Aioli

    Slice the Vegetables

    Thinly slice the cucumber and jalapenos. Chop the cilantro roughly.

    Make the Chili Aioli

    In a bowl, mix mayonnaise, fermented chili paste, and lemon juice until well combined.

Assembly

    Slice the Bread

    Cut the French bread loaf in half lengthwise.

    Assemble the Poutine

    Layer the shredded pulled pork on the bottom half of the bread. Top with pickled carrots, daikon, cucumber, jalapenos, and cilantro. Drizzle with the fermented chili aioli. Place the top half of the bread on.

    Serve

    Cut the sandwich into portions and serve immediately.
