Slice the Vegetables
Peel and slice the onions thinly. Remove the stems from the green chiles and chop them. Slice the pepperoncinis if they are whole.

Caramelize the Onions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until they are soft and caramelized.

Cook the Meat or Mushrooms
In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced ribeye or oyster mushrooms and season with salt and pepper. Cook for about 5-7 minutes until cooked through (for mushrooms, until they are tender).

Prepare the Bread
Slice the French bread sub rolls lengthwise without cutting all the way through. Optionally, toast the bread lightly in the oven.

Add the Cheese
Place the meat or mushroom mixture into the bread and top with slices of white American and provolone cheese. If desired, you can place the sandwiches under a broiler for 1-2 minutes until the cheese melts.

Cut the sandwiches in half and serve immediately. Enjoy your Philly cheesesteak!
